QuarkXPress and InDesign might be the best, but we've gotten good results using Illustrator and PowerPoint. There is PowerPoint template for posters available - http://office.microsoft.com/en-us/templates/TC100214271033.aspx .
A poster should give the basics BUT provide a means for more discussion.
