I worked outside the US for ten years, specifically in the United Arab Emirates, Saudi Arabia, Cyprus and Austria while accompanying my husband in the Foreign Service. I served as Dean of Students at the American University in Dubai.  I enjoyed advising and counseling students from many countries. As well I served as Chair of Institutional Effectiveness, conducted freshmen placement testing and organized student retention programs. After Dubai, I continued in the Middle East as the Director of Health Education at King Fahd Hospital in Jeddah, Saudi Arabia where I ran health education programming for the medical staff. I was an Assistant Professor at Intercollege in Larnaca, Cyprus. What a lovely location and University serving students from Europe, the Middle East and Asia. Lastly in my overseas adventures, I served as Adjunct Faculty at the Institute of Nutrition at the University of Vienna teaching nutrition programming and nutrition education.

Mildred Kaufman, MS, RD who was the director of my MPH/RD program and taught me so much about Community Nutrition

My hope is to give back to my students some of what these two gave to me with their time and their commitment and caring for their students and for the community
