Biography:

Subsequent to granting of the Ph.D. degree, Dr. Matsushima joined the faculty of the Department of Animal Science at California State Polytechnic University, Pomona, in 1971. During his tenure with the university, he coordinated the development and implementation of the Master of Science program in Agriculture with option in Animal Science and served as its first Graduate Program Coordinator. In addition, he coordinated the development and implementation of the department's undergraduate and graduate internship programs.

Dr. Matsushima served as Interim Chairperson for the Department of Animal & Veterinary Sciences from September 1994 through February 1998. He was subsequently appointed Department Chairperson and served in this position until Feburary 2000. Dr. Matsushima currently serves as the Associate Chairperson for the department.

Teaching Areas/Expertise:

Undergraduate and graduate courses in Meat Science and Processing.

Research Areas/Expertise:

Dr. Matsushima's research interests have been primarily in the determination of functional characteristics of non-meat ingredients such as phosphate blends, low fat processed cheese, fish protein isolate, modified potato starch, etc. in processed meat products. He has also served as a consultant to small and mid-size meat processing firms in the area of product defects.

Awards/Recognition/Professional Activity:

As an undergraduate and graduate student, Dr. Matsushima was awarded membership into Alpha Zeta, Gamma Sigma Delta and Sigma Xi. Professionally, he is a member of the American Society of Animal Science, the American Meat Science Association and the Institute of Food Technologists. He has served as a judge for cured and processed meat competitions sponsored by the California Meat Processors Association and American Meat Processors Association.

2) Dr. Matsushima received the Mach H. Kennington College of Agriculture Advisor of the Year award for 2000-2001.
