Dr. Caudill is an Assistant Professor and Director
of the Didactic Program in Dietetics in the Food, Nutrition and
Consumer Science Department at California State Polytechnic University,
Pomona. Following the obtainment of an MS in Nutrition, she completed
a 9-month Dietetic Internship at Emory University Hospital in
Atlanta, Georgia. She then pursued her Ph.D. in the area of human
requirements for folate at the University of Florida. Upon completion
of her Ph.D., she accepted her current position at Cal Poly Pomona.
Nutritional Biochemistry, Clinical Nutrition, Community
Nutrition and Nutrition Education, Sports Nutrition, Vitamins
and Minerals.
Dr. Caudill's research area is folate metabolism
in health and disease including folate's role in cancer, heart
disease and neural tube defects. She has given several invited
guest lectures on the role of homocysteine in the development
of heart disease and has recently investigated the prevalence
of hyperhomocysteinemia in post-menopausal women with type 2 diabetes.
She is currently investigating the impact of folic acid fortification
of the food supply on women of childbearing age, the target population.
In 1995, Dr. Caudill received a Departmental Assistantship
from the Department of Food Science and Human Nutrition at University
of Florida. In 1997, she received a scholarship from the National
Institute of Health. In 1998, the University of North Florida
recognized her as an outstanding alumna.
