A visit to our experimental food science lab

People in our major are scientists but we’re fun and down to earth. We apply our interest in biology, chemistry, and physics to everything from developing new food products to analyzing samples for contaminants (food safety is huge right now). We learn by doing in creative labs, internships with local companies, and community service programs through our clubs.

Actually it’s a special process by which you engineer a chemical reaction that turns a liquid into self-contained globules which can be used for….

Lots of people are allergic to the gluten that’s in grains like wheat. See our experiments that track the changes in physical properties when gluten-free ingredients are used.

Clubs and Events
Through our clubs we get involved in community projects, such as developing healthful snack products and even pre-prepared lunch foods for school kids. Here, we’re seeing how our ideas go over in grade school.

Our clubs put on a campus health fair called “HealthFest”. We show students how to eat healthier, even at fast food places, with workshops, booths and posters. Which is better: burger or salad? (Hint: the salad has 1,700 calories & 2,700 g. sodium!)

Other Cool Stuff
When you’re a food scientist, they pay you to play with food! So says this careers video by the IFT, the national food tech professional society we’re very involved in (great networking).
Our Culinology program is one of the few approved by the RCA (Research Chef’s Association). Develop new products – take your ideas from the lab to full scale retail sales – or the table.
We make posters to present the results of our lab experiments. (Click to enlarge)
