Biography:

  • Food Scientist/Microbiologist with training in Molecular-Based Methods. Education, research, extension, and outreach experiences from 3 continents. Joined Cal Poly Animal & Veterinary Sciences Department in Fall 2005.
  • Previous research involved evaluation of lactic acid-producing Bacillus and Sporolactobacillus for activity against Listeria monocytogenes a key pathogen in ready-to-eat meat products. Evaluated colicins for inhibitory activity against diarrheagenc E. coli strains, including, E. coli serotype O157:H7and finding natural methods for their control in particular using colicins. Conducted cytotoxicity studies of colicins on cultured mammalian cells with relevance to potential use of colicins in food/feed.
  • Extensive postdoctoral experiences involved a focus on reduction of mastitis pathogens ( Staphyloccoccus, aureus, Streptococcus agalactiae, Streptococcus uberis ) and foodborne pathogens (Shiga toxin-producing E. coli, Listeria monocytogenes, Campylobacter jejuni and Salmonella species) from dairy farms. Conventional, rapid methods and molecular-based methods were employed. Pathogen detection and quantification involving use of PCR and Real-Time PCR.
  • Developing a Benign Lab (Non-Pathogen) for detection and enumeration of food spoilage microorganisms (with Dr. Maria Botero-Omary). Research projects will focus on shelf-life studies (e.g., Hispanic food products). Project will emphasize detection and quantification of spoilage microorganisms. Specifically, fungi (yeasts and molds), total viable bacteria, and coliform bacteria that degrade or adversely affect the organoleptic properties (off-colors and off-odors, sliminess, texture, etc.) of processed foods, and hence curtail shelf-life of food will be targeted. The long term goal of this collaboration is to develop effective control methods for spoilage microorganisms using natural or non-antibiotic methods.
  • Developing a new Foodborne Pathogen Research Laboratory at the Equine Research Center Laboratory. This lab's research will focus on pathogens of interest to the Meat and Dairy industries. Additionally, to cater for the Equine industry, research will be initiated on discovery of probiotics with special emphasis on reducing death of foals caused by toxin-producing Clostridium bacterial species which are indicated to be prevalent in this sector. Probiotics are beneficial live bacteria that are fed to animals to competitively exclude pathogens from the gastrointestinal tracts of these animals.
