Laboratory Manual: Beilby, Introduction to Foods Lab Manual, Revised Fall 1998 by B.B. Whitmore

Students will learn scientific principles and techniques of food preparation by categories. Elements of food sanitation, legislation and consumer choices will also be addressed. Students will be able to demonstrate and apply scientific principles and techniques in the laboratory.

The student prior to attending the lecture must do assigned reading.

Schedule of reading assignments, lecture topics, lab exercises and EXAMS.

Laboratory Attire:
A white, properly -maintained (clean), full-length laboratory coat must be worn whenever a student is working in the Food Science Laboratory. A hairnet and/or a beard net (if applicable) must be worn at all times, and is provided by the student (Available at beauty supply stores).

Evaluation and Grading:

Examinations (2 mid-terms and comprehensive final).
Examinations are based on lecture, handouts, and text materials.
= 50% of final grade

Laboratory work:
Attendance
Evaluation of Applications
Proper lab attire and grooming
Cooperation in individual and group procedures; organization and sanitation; participation in and contribution to group discussion of results.
Appropriate completion of Laboratory Manual
Overall professionalism of attitudes and actions
= 50% of grade

Letter Grades are based on the usual A=90% and above, B=80-89%, C=70-79%, D=60-69%. The plus and minus system is employed in the grade calculation.

As a general policy, no make-ups for exams will be given. Exceptions to this rule require prior permission and a grave reason. All laboratory sessions are mandatory; NO makeup labs are permitted. The student will receive a "0" for each lab missed
