I have
taught at Cal Poly since Fall Quarter 1995. I have instructed many
classes. These include FN228 Food and Culture, FN305 Nutrition, Science and Health,
FN346 Community Nutrition, the lecture and laboratory of FN121,
Introduction to Food Science FN345 Nutrition Education
and Activity (lab), FN325 Current Issues in the Food
Chain, and FN321 Experimental Foods. Previously, I
instructed Biology laboratories and taught Medical
Microbiology at La Sierra University (Formally Loma Linda
University, Riverside). I received my BS in Biology/Human Biology/Microbiology from La Sierra University, and a Masters of Public Health and Nutrition from Loma Linda University School of Public Health. Presently, I am a Nutrition Doctoral Candidate at Loma Linda University in the School of Public Health. I am a Registered Dietitian with the American Dietetic Association and a member of the American Public Health Association, A.P.H.A. Food and Nutrition Group, The American Dietetic Association, California Dietetic Association, Vegetarian Practice Group, Educators' Group, Clinical Group, The Tri-Counties Dietetic Group and The American Association of Family and Consumer Sciences. Present Research: I am presently conducting a human feeding study, looking at the effects of eggs, DHA eggs, and walnuts in Lacto-ovo Vegetarians. I am also working with Dr. Cordero-MacIntyre at Loma Linda University on the Walnut Follow-up Study. Past Research: I have done research with liposomes containing a phosphatase enzyme, growth and transplantation of plant tissue callus, growth and maintenance of a rare infantile fibrosarcoma cell line, and determination of ribosomal post-translational modifications of Streptomycin binding sites of 4 strains of E. coli. I have co-authored two chapters in Natural Food Antimicrobial Systems with Dr. A.S. Naidu, CRC Publishing. I have also completed a review of the scientific literature concerning eggs for the California Egg Commission and have worked continuously with Kashi Foods for their recipe analyses. My professional interests include all aspects of food safety, food and culture, research, and designing educational materials and teaching aids. My hobbies include: Hiking, Bocce, writing, painting, reading, softball (I am in a league), riding mountain bikes, horseback riding, fishing, swimming, camping, backpacking, crafts, needlepoint, cooking, and baking. I am married to a great guy named Mike and we have 3 kids-ages 21, 19 and 15 years. |
